Chicken nuggets

We love these chicken nuggets. They are tasty, crispy and best of all not pressed together chicken meat. They are not at all bland and you can add spices to make some really great chicken nuggets you and your kids will love.

You will need (how much of each depends on how many you want to make)

gluten free flour mix (Add your favorite seasonings to taste. Try Italian dressing mix and it was quite tasty)
1 egg + 1 Tablespoon water beaten
1 bag plain potato chips
Chicken tenders or boneless skinless breasts cut into nugget sized pieces

Put some gluten free flour in a bowl (you will be coating the chicken pieces with it)

Next in line is a bowl with the beaten egg and water

Crush the bag of potato chips. The more you crush it the better. I usually put the crushed chips in a zip lock bag. Put some of the crushed chips in a bowl.

step 1: coat chicken in flour

step 2: coat floured chicken in egg mixture

step 3: coat with chips. I like to press the chicken in to make sure all sides have a nice coating of chips. (add more chips from your bag you set as side as you need them. I like to have them separate that way I can save the left over crushed chips for the next time we decide to make more)

step 4: place on cookie sheet.

There are two ways you can cook these up.
1: fry them in hot canola oil till golden brown. (approx 3 minutes each side)(this is the best method if you plan to freeze the extras as the chips will stay crispy)

2: bake them in the oven at 350 degrees for 15 to 20 minutes.(I use to make them this way all the time even when I froze the extras. If you microwave the left overs (frozen or not) the chips are not very crispy any more. I like crispy chicken nuggets so reheating these is best done in the toaster oven.)

Since these can take a bit of time to make from start to finish, I tend to make more than we will eat so that my son can have some when ever he wants. I put them in a freezer bag and reheat. I don't know about your kids but mine tend to go through stages when they want certain foods all the time. For my son that can have gluten I keep a bag of regular chicken popcorn in the freezer (since it feels like he wants to live on chicken nuggets alone these days). That way I have these for my son that can't have the gluten but would also like chicken nuggets (though not as much as his brother). It is nice to have quick fix foods like this on had.
